Teriyaki & Chaga Mushroom Bao Buns


INGREDIENTS (Makes 6 buns)

350g oyster mushrooms, roughly chopped
2 tbsp sesame oil
2 garlic cloves, crushed
2 tbsp ginger, grated
50ml teriyaki
1 tbsp chaga powder
2 tbsp (GF) soy sauce
3 tbsp honey
2 limes, juiced
6 bao buns 
1/2 cucumber, peeled into thin slices
15g coriander, roughly chopped
2 spring onions, finely sliced
2 tbsp toasted sesame seeds


Place a frying pan over a medium high heat with a drizzle of sesame oil. Once hot add the garlic & ginger, stirring continuously for a minute before adding the soy, teriyaki, honey and lime juice.

Let it bubble over a medium heat for five minutes. Add in the mushrooms and stir so everything is coated. Add in the chaga powder and continue to cook for a couple of minutes and the sauce thickens up.

Microwave the bao buns as per the instructions and serve up.

Stuff the buns with the mushrooms, cucumber, spring onions, sesame seeds & coriander.
